If your family is anything like ours, you find yourself both pressed for time, and often searching for a quick but tasty meal idea. This week included both of these challenges for me.

Between dance, soccer, and getting out of work late – and compounded by my wife being out of town, I was definitely searching for a good dinner idea this past Friday. It was a perfect time to try a selection of Smithfield Marinated Pork. I stopped into Walmart and found they had a great selection.IMG_2920

Smithfield Marinated Pork is already marinated and comes in seven different varieties so finding one your family would like is easy. We use a lot of garlic and herbs when we cook, so their Garlic and Herb Pork Loin Filet (also comes as a sirloin) was perfect for us. But since I saw so many choices, I also picked up a Mesquite flavored one as well! Their other flavors include Golden Rotisserie, Portabella Mushroom, Peppercorn and Garlic (also comes as a Sirloin).

Being always on the run sometimes forces us to eat less nutritious meals, so we embrace any chance where we can have a nice, home-cooked, sit-down dinner as a family. The Smithfield Marinated Pork was as easy to cook as anything you could choose and required no real effort. It is:

o   Slow-marinated in delicious seasonings for full flavor

o   Perfectly seasoned and expertly marinated

o   100% fresh pork

o   Perfect for any night – Grilled. Roasted. Sautéed.

o   Marinated for little prep or mess

My kids love mashed potatoes and (some) vegetables, but one likes corn, and the other prefers carrots. I think the fact they will eat them at all is a minor miracle sometimes, so I often opt for some mixed vegetables to make them both happy. While I would prefer to make fresh mashed potatoes, we rarely have the time to peel, boil, and mash them so we frequently settle for instant potatoes – honestly the kids seem to like them better anyway.

Cooking was simply and quick following the guidelines on the packaging. No major steps are needed; I just placed the Smithfield Marinated Pork Filet in a shallow baking dish and baked it at 375 for about 20 minutes per pound.

While the pork filet was baking, I had the girls get cleaned up and help me set the table. By the time I selected and prepared the side dishes, and we were ready to sit down to eat, the pork was done – time to eat!
